"Jerk" is a style of cooking native to Jamaica in which meat is dry-rubbed or marinated with a spicy mixture called jerk seasoning. Jerk seasoning is traditionally applied to pork and chicken but can also be used sparingly to season fish. There are as many recipes for Jerk seasoning as there are sunny days in Jamaica and most tend to be on the uber hot side, ours has a habanero kick but the primary flavours are ginger, cloves and garlic.
