Chipotle means "smoked, dried jalapeños". Unripe jalapeños are green and at the end of the growing season, jalapenos naturally ripen and turn bright red. They are kept on the bush as long as possible and when they are deep red and have lost much of their moisture, they are picked to be made into chipotles. The red jalapeños are smoked for several days, until most of the moisture is removed, and a chipotle is born.
The underlying heat of the jalapeños combines with the taste of smoke to create a mouth-watering sensation. The brown sugar, honey and orange really round out the intensity of the Chipotle flavour and heat of this rub.
