Q. What is a "Rub"?

A rub is a spice and herb mixture that is spread over or rubbed onto foods, especially meat and poultry, before cooking. They are often used in grilling and smoking because they stick to the meat during the process. 

It is recommended that you work the rub amount into the meat up to 24 hours before cooking; cover and refrigerate the meat until ready to use. Apply a second coat just before grilling or smoking. If salt is a key ingredient, add just before cooking to keep the meat from drying out. 

 

Q. What's the difference between a "Rub" and a "Blend"?

There are no hard and fast rules, but generally, a Rub is a standalone seasoning that does not require additional ingredients before cooking (except maybe butter, oil); whereas Blends are usually one element of several that make up a dish.    

 

Q. How much product should I use? 

Depends entirely on your palate and the number of servings you are preparing.  Just remember, you can always add more.  Blends and Rubs are meant to used, not store in the back on the pantry.  They are awesome time and money saver that will transform everyday dishes into something special.  Keep out on the counter or with your oil. Everytime you go to the shop keep in mind you aready have these at home so you can jut pick up your favourite protein and focus on the rest of your list.

With the Salt & Peppers use as a replacement for every day table salt and pepper.  Some of these blends are very favourful, so remember, you can always add more. Most of the salt blends do not contain pepper so you might find you need to keep our gourment pepper blend at the ready.  

With the Sugars if you are baking, you'll need to experiment because every recipe is different.  If you are using as a garnish, cake topping, or in cocktail - use at will!!!
